Soft inside, Crunchy outside, Tasty all over! Here is an easy peasy recipe for a 550g bread that will excite your tastebuds, no matter if you are Diabetic!

This bread is perfect also for any Keto eater or Paleo Diet.

Easy Bread — 16 Slices ,enough for 4/5 days — Keep in the fridge.

Ingredients:

2 cups of Almond Flour

2 Tbsp of Coconut Flour (not essential)

1/4 cup of Flaxseed meal/flour

1 Tbsp of Arrowroot flour

1 Tsp Xanthan Gum (not essential)

1/2 Tsp Baking Soda

1 & 1/2 Tsp Baking Powder

Salt

3 Large Eggs + 2 Egg Whites

1/4 cup of Almond Milk

1/4 cup of Olive Oil

Instructions:

1 Preheat the oven at 200 C (350F) and line up a loaf pan with baking paper.

2 In a large bowl combine all the dry ingredients, then one by one add all the wet ingredients.

3 Mix very well but try to not overmix.

4 Transfer all the thick mixture into the loaf pan and tap repeatedly on the countertop to release any air bubble within the mixture.

5 Bake for 45/55 minutes until golden and brown.

Allow the bread to cool down enough, enjoy with your fav topping!

Flaxseed flour is packed full of Omega 3, so important to lower inflammation, Almonds are a great source of protein and the Olive oil adds up in flavour!
